Brown Sugar Bacon
I've made this numerous times over the past few years. It has come out like this(perfect) twice, the first time I made it and today.
French Toast
I was the first up and decided to make French Toast for everyone. For my batter I used eggs, milk, cinnamon, sugar, and maple syrup. The bread is 100% whole wheat. I put butter, syrup, & strawberries on mine. A great way to start the day!

WOW! I couldn't be happier with the outcome. They are sweet, savory, and smokey. These will be made again for years to come!

Dessert
The last of the cookie batter I made last week was used for these cookies. Whenever we make cookies we always freeze quite a few for future use. Topped with Stonyfield's Gotta Have Vanilla.
Broccoli & Onion Pizza
As usual I used the Muir Glen sauce, and the cheese was Sole Queso Quesadilla. Chopped some broccoli and grilled some yellow onions, also added salt and pepper to this easy meal.

Tuesday Morning Cookies
Semi-sweet & dark chocolate chips, caramel bits, & a lot of brown sugar( I had to substitute because we were low on raw sugar).

Saturday Night Pizza
I make the same things over and over, they're what I love to eat. More pizza. I'm so glad this doesn't get old. Dana brought home some whole grain pizza crust from Whole Foods. As usual I used the Muir Glen sauce, and the cheese was Sole Queso Quesadilla.
Quick and easy, less than a half hour from when I started it until I got to eat it!

Our Easter Feast...a bit late
Our Easter feast was the opposite of traditional. Though it was spectacular! We had pulled pork ( Kansas City style BBQ, and chocolate BBQ), green beans( w/ almonds, garlic, & sherry vinegar), potato skins( w/ cheddar cheese, bacon, green onions), a traditional cole slaw, and a broccoli cole slaw.
The chocolate BBQ is the darker of the two.
I also made homemade marshmallows w/ rice crispies inside. A reverse rice crispie treat?
I've made these numerous times, this is the recipe I use.
The full pan pic came out better than individual pics....
All in all a great Easter meal. I was responsible for the chocolate BBQ, Dana made the rest.

Bacon & Guac Tacos
Yet again more tacos! I think the official name should be "Bacon & Guac Tacs". The guac was made with avocados, grilled onions, garlic, lime juice, hot sauce, worcestshire sauce, salt , and pepper. Oh and just a splash of bacon grease. Topped the guac with bacon, tomatoes, raw onions, and served on a flour tortilla. I highly recommend making something like this, it was just about perfect for me!

Bison and Cheese Enchiladas w/ Pineapple-Lime Salsa
Last nights dinner was both fun to make, delicious, and something I am very proud of. For the enchiladas, first I cooked the bison meat with salt, pepper, and onions. As it cooked I got some cheddar and Monterrey jack cheeses as well as corn tortillas ready. I warmed the tortillas for easier rolling. When the meat was almost finished cooking I removed the heat and rolled into the tortillas with cheese. I lined up the enchiladas in a pan(with seam side down). Then topped them with Rick Bayless Red Chile Enchilada Sauce and cheese. Then into the oven at 400 degrees for 15 minutes.

I also made a pineapple-lime salsa...
Pineapple, lime juice, onions, tomatoes, mint pepper jelly, salt, and pepper. I found a simple recipe for pineapple-lime salsa, didn't necessarily follow it, just used what I thought would work. And it totally worked!

I Just Love Makin' Tacos!
Last night my sister-in-law brought over some tuna steaks for us. I guess she had extra, so score for us! A perfect opportunity for fish tacos. What else to use? Dana had brought home tomatillos & jalepenos. We had red onions. I sautéed the onions, tomatillos, & jalepenos, adding only salt and pepper. I chopped up the tuna and added to my vegetable mix at the end. Served with whole wheat flour tortillas and a bit of mayo.
